Soffit Size

Question: We are replacing a damaged soffit on our house. The house was originally bricked which we took off and put up hardi plank. The overhang is wider than the vinyl or hardi soffit and we will build it using 3/8 ac. Is there a way to decrease the overhang so we do not waste half the sheet of 3/8 ac? Expense is an important part of our decision.
