Wood Paneling For Bathroom

Question: Greetings, For a bathroom remodel, I wish to go with a look very similar to that in photo by below link. http://www.nuvomagazine.com/spring_2005/bathroom_design,_the_new_zen_space/ I hope to have my local lumberyard mill the appropriate wood into an 20x13” tongue and groove, thickness not determined, for the walls. Any suggestions as to type of wood that should be used, recommended installation and/or topcoat to protect the wood for this environment? I’d like to avoid the shiny look of marine varnish, if possible. Warmest regards
